Culinary Arts AAS

The Culinary Arts program is designed to prepare qualified graduates for entry-level employment in the Culinary Arts industry. The program provides students with the skills necessary for employment in following, but not limited to, areas as an entry-level cook, bakery apprentice, butchery apprentice, caterer, and food service/purchasing operations assistant. Students successfully completing the curriculum described below will meet all requirements for the Associate of Applied Science degree.

Students will get a hands-on experiential foundation in the culinary arts, including classic and contemporary cooking techniques, flavor and menu development, nutrition, meat processing, production cooking, baking, and world cuisines. Students will also develop business skills with courses in hospitality management, communication, purchasing, facilities operations, and beverage management.

As part of the Culinary Arts degree program, students will have the opportunity to get real-world experience during a semester-long internship at a food industry approved business, or in the bistro of the South Plains College Culinary Arts department.

TSI-waived Certificates of Proficiency options are also provided as program options.

Program advisors are Natalie Osuna, Culinary Arts Program Developer, and Patrick Ramsey, Certified Executive Chef.

 

Culinary Arts Technology AAS Admissions Process

  1. Apply for admission to South Plains College
  2. Take TSI Assessment (Not required for certificate-only students)
  3. Take Culinary Assessment

- Test is designed to assess reading comprehension and math skills as it pertains to Culinary Arts. Students will have 75 minutes to complete 30 multiple choice questions.

  • Students must show proof of admission to South Plains College, give their SPC username, and register for a specific date and time in advance by emailing Chef Ramsey at pramsey@southplainscollege.edu.
  • Dates and times for the Culinary Assessment can be scheduled by appointment. All tests will be held at the South Plains College Lubbock Center: 3907 Ave. Q Lubbock, Texas 79412.
  • Students may bring a calculator and scratch paper to use during the assessment.
  • No cell phones or other electronic devices (except calculators) will be permitted in the testing room.
  1. Submit a letter of recommendation from an employer in the culinary industry, a culinary teacher, or high school counselor.
  2. Attend the Culinary Orientation (date to be determined)
  • Deadline for 1-4 is June 1st!

Culinary Assessment

  • worth up to 90 points

Letter of Recommendation

  • worth 10 points

Max Points: 100

Sixty-four (64) students with the highest total points will be selected for the Culinary Arts Technology AAS program.
